We produce these beans, which are a Slow Food Presidium, with great love.
The Pigna White Bean is grown on dry terraces in the municipalities of Pigna and Castelvittorio. It needs calcareous water and well-drained soil. It is sown in June and harvested in September, when the legume is dry.
Once harvested, the bean is shelled and finished drying in a natural way, outdoors in the sun.
The White Bean of Pigna has a pinkish appearance and its texture is firm and soft with delicate and thin skin, a real treat for the finest palates.
